For the Battered Fish

Prepare the batter
In a bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the cold beer or sparkling water, mixing until you have a smooth batter.

Heat the oil
In a deep frying pan or a fryer, heat the vegetable oil to 350°F (175°C).

Batter and fry the fish
Dip each fish fillet into the batter, allowing the excess to drip off. Carefully place the battered fish in the hot oil and fry for about 4-5 minutes or until golden brown. Remove and drain on paper towels.

Prepare the potatoes
Peel and cut the russet potatoes into thick fries. Soak them in cold water for at least 30 minutes to remove excess starch, then drain and pat them dry.

Mix the tartar sauce
In a bowl, combine the mayonnaise, chopped pickles, lemon juice, and capers. Season with salt and black pepper to taste. Mix well and refrigerate until ready to serve.
