Beef Tenderloin Preparation

    Sear the Beef

    Preheat a skillet over medium-high heat. Season the beef tenderloin pieces with salt and black pepper. Add olive oil to the skillet and sear the beef for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest.

Exotic Mushroom Jus Preparation

    Make the Mushroom Jus

    In the same skillet, add chopped shallots and minced garlic. Sauté until translucent. Add exotic mushrooms and cook until softened. Pour in red wine and beef stock, add thyme, and bring to a simmer. Reduce until thickened, then whisk in butter before serving.

Roasted Garlic Mashed Potatoes Preparation

    Prepare the Mashed Potatoes

    Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft. Boil the potatoes in salted water until tender. Drain and mash with roasted garlic, butter, heavy cream, salt, and pepper until smooth.

Plating

    Serve the Dish

    Slice the rested beef tenderloin and serve it on a plate. Spoon the exotic mushroom jus over the beef and serve with a generous helping of roasted garlic mashed potatoes on the side.
