Preparation

Cook Jasmine Rice

Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and water in a saucepan, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes or until the water is absorbed. Stir in peanut butter and soy sauce, fluff with a fork, and keep warm.

Blanch Green Beans

Bring a pot of water to a boil. Add salt and green beans, and cook for 3-4 minutes until bright green and tender-crisp. Drain and rinse under cold water to stop cooking. Set aside.

Make Ginger Citrus Tamari Sauce

In a small bowl, whisk together tamari sauce, grated ginger, lime juice, and orange juice. Set aside.

Sear Ahi Tuna

Pat the Ahi tuna steaks dry and season both sides with za’atar spice blend and salt. Heat olive oil in a skillet over medium-high heat. Once hot, add the tuna steaks and sear for about 1-2 minutes on each side for rare doneness. Remove from skillet and let rest for a minute before slicing.

Plate the Dish

On each plate, create a bed of peanut butter jasmine rice, arrange sliced tuna on top, and add green beans on the side. Drizzle with ginger citrus tamari sauce to finish.
