In a saucepan, combine water, white vinegar, salt, and sugar. Bring to a boil, stirring until the salt and sugar dissolve. Remove from heat.

Add garlic cloves, mustard seeds, black peppercorns, red chili flakes, and dill weed to the brine. Allow to cool slightly.

Pickling

Pour the brine over the mixed vegetables in the mixing bowl. Ensure the vegetables are fully submerged. Transfer the mixture to sterilized jars and seal tightly.
