Method
To Prepare the Roasted Lamb Saddle
Roast the Lamb
Place the seasoned lamb saddle in a roasting pan and roast in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare. Let it rest for 10 minutes before slicing.
To Prepare the Intense Lamb Jus
To Prepare the Sweets, Beets, and Bacon Hash
Cook the Bacon
In a large skillet, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the skillet.
Sauté the Hash
In the same skillet, add diced sweet potatoes and beets. Cook until tender, about 10-15 minutes. Add chopped kale and cooked bacon, stirring until the kale is wilted. Season with salt and pepper to taste.
