    Prepare the Dates

    Preheat the oven to 400°F (200°C). Slice each Medjool date lengthwise and remove the pit. Wrap each date with a slice of bacon and secure with a toothpick. Place on a baking sheet and bake for 15-20 minutes or until the bacon is crispy.

    Prepare the Slaw

    While the dates are baking, julienne the cucumber and red onion. Segment the ruby grapefruit, removing the skin and white pith. Combine cucumber, grapefruit segments, red onion, and cilantro in a bowl. Drizzle with lime juice and season with salt to taste. Toss gently and set aside.

Cooking Scallops

    Cook the Scallops

    In a skillet, heat olive oil over medium-high heat. Season scallops with salt and pepper. Once the oil is hot, add scallops and sear for 2-3 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

    Prepare Brown Butter

    In the same skillet, reduce heat to medium and add unsalted butter. Let it melt and cook until it turns golden brown and has a nutty aroma. Be careful not to burn it.

Assembly

    Plate the Dish

    On a serving platter, arrange the bacon-wrapped dates. Top each date with a scallop and drizzle with the brown butter. Serve alongside the cucumber-ruby grapefruit slaw.
