Method

Poaching the Pears

    Prepare the Poaching Liquid

    In a large saucepan, combine the red wine, sugar, cinnamon stick, cloves, and vanilla extract. Bring the mixture to a simmer over medium heat until the sugar dissolves.

    Poach the Pears

    Peel the pears, leaving the stems intact. Submerge the pears in the simmering wine mixture. Cover and cook for about 20-25 minutes, or until the pears are tender. Remove the pears from the poaching liquid and set aside to cool.

Making the Ricotta Filling

    Combine Ingredients

    In a mixing bowl, combine the ricotta cheese, honey, and vanilla extract. Mix until smooth and well-combined. Set aside.

Making Balsamic Reduction

    Cook the Balsamic Vinegar

    In a small saucepan, combine balsamic vinegar and honey. Bring to a gentle boil, then reduce heat to low. Simmer for about 10-15 minutes, or until the mixture has thickened slightly. Remove from heat and let it cool.

Assembling the Dish

    Plate the Pears

    To serve, place each poached pear on a plate. Fill the center with the sweet ricotta filling. Drizzle the balsamic reduction over the pears and around the plate for presentation.
