Preparing the Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a pot. Bring to a boil, then reduce heat to low, cover, and let simmer for 20 minutes.

Assembling the Hand Rolls

Prepare the Nori
Place a nori sheet shiny side down on a bamboo mat or clean surface.

Add Rice
Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the bottom half of the nori sheet, leaving about an inch at the bottom edge.

Layer the Fillings
On top of the rice, layer the prosciutto slices, goat cheese, preserved figs, and arugula.

Drizzle Balsamic Glaze
Drizzle the balsamic glaze over the fillings.

Roll the Nori
Starting from the bottom edge, carefully roll the nori away from you, tucking it tightly around the filling. Roll until you reach the edge and seal it with a little water.

Slice and Serve
With a sharp knife, slice the hand rolls in half and serve immediately.
