Method
Prepare the Soba Noodles

Cook the noodles
Bring a pot of water to a boil, add the soba noodles, and cook according to package instructions until al dente. Drain and rinse under cold water.

Mix the sauce
In a bowl, combine sesame oil, peanut butter, soy sauce, honey, and sesame seeds. Toss the drained noodles with the sauce until well coated.
Make the Szechwan Citrus Sauce

Prepare the sauce
In a small saucepan, combine Szechwan peppercorns, soy sauce, citrus juice, minced garlic, brown sugar, and chili flakes. Bring to a simmer over medium heat and cook for about 5 minutes until thickened.
Cook the Sesame Asparagus

Sauté asparagus
Heat sesame oil in a skillet over medium heat. Add the trimmed asparagus and sauté for about 5 minutes until tender. Add soy sauce and sesame seeds, and mix well.
Prepare the Pepper Crusted Tuna

Season the tuna
Pat the tuna fillets dry with paper towels. Season both sides with coarse ground black pepper and salt.

Plate the dish
On a plate, serve a portion of the sesame-peanut-soba noodles, top with sesame asparagus, and place the seared pepper crusted tuna on the side. Drizzle Szechwan citrus sauce over the tuna and noodles.
