Make the Dough
In a mixing bowl, combine flour and salt. Make a well in the center, add eggs, and mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Cook the Filling
In a skillet, heat olive oil over medium heat. Add leeks and shallots, and sauté for 3-4 minutes until soft. Add mixed mushrooms and cook for another 5-7 minutes until browned. Stir in chopped spinach, and season with salt and pepper. Remove from heat and let cool slightly. In a bowl, combine the mushroom mixture with ricotta cheese.

Assemble Ravioli
Roll out the pasta dough on a floured surface until thin. Cut into squares. Place a small spoonful of filling in the center of each square. Fold the dough over to create a triangle and seal the edges. Repeat with remaining dough and filling.

Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes until they float to the surface. Remove with a slotted spoon and set aside.
Madeira Cream Sauce Preparation

Prepare the Sauce
In a saucepan, melt butter over medium heat. Add heavy cream and Madeira wine. Bring to a simmer and stir in shaved Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
Serving

Serve the Ravioli
Plate the cooked ravioli and drizzle with Madeira cream sauce. Garnish with additional shaved Parmesan and serve warm.
