Make the Cookie Dough
Preheat your oven to 350°F (175°C). In a bowl, whisk together the flour, baking soda, and salt. In another bowl, beat the softened butter, granulated sugar, brown sugar, and vanilla extract until creamy. Add the egg and mix well. Gradually add the dry ingredients to the wet ingredients and mix until combined. Fold in the chocolate chips.

Bake the Cookies
Drop tablespoon-sized amounts of dough onto a lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are golden. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Assemble the Mini Ice Cream Sandwiches
Once the cookies are completely cooled, take a generous scoop of vanilla ice cream and place it between two cookies. Gently press them together to form a sandwich. For a fun presentation, roll the edges of the ice cream in extra chocolate chips if desired.

Serve immediately or place the assembled sandwiches in the freezer for about 30 minutes to firm up before serving.
