Preparation of Fries

    Cut the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry with paper towels.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the potatoes in batches to the hot oil. Fry until golden brown and crispy, about 5-7 minutes.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. While still hot, drizzle with truffle oil and sprinkle with salt.

Preparation of Truffle Ketchup

    Mix Ingredients

    In a bowl, combine ketchup, truffle oil, garlic powder, black pepper, and chopped parsley.

    Serve

    Serve the fries hot with the truffle ketchup on the side.
