Grilled Shrimp and Scallop Skewers Preparation

    Marinate the Seafood

    In a bowl, combine olive oil, minced garlic, lemon juice, paprika, salt, and black pepper. Add the shrimp and scallops, tossing to coat. Cover and marinate for 30 minutes.

    Prepare the Skewers

    Pre-soak wooden skewers in water for 30 minutes if using. Thread 2 shrimp and 2 scallops onto each skewer. Repeat until all seafood is used.

Roasted Poblano Cream Preparation

    Roast the Poblano Peppers

    Preheat your grill or oven to high heat. Roast the poblano peppers until the skin is charred and blistered, about 10-15 minutes. Remove and let cool, then peel off the skin, remove seeds, and chop.

    Make the Cream

    In a blender, combine the roasted poblano peppers, sour cream, cream cheese, garlic powder, lime juice, and salt. Blend until smooth. Stir in chopped cilantro if desired.

    Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 2-3 minutes on each side until the shrimp are pink and opaque and the scallops are golden brown.
