Prepare the Marinade
In a bowl, whisk together soy sauce, red wine vinegar, Worcestershire sauce, olive oil, minced garlic, brown sugar, black pepper, and salt until well combined.

Marinate the Steak
Place the sirloin steak in a large resealable bag, pour the marinade over it, seal the bag, and refrigerate for at least 2 hours (or overnight for best results).
Caramelized Onions

Cook the Onions
In a skillet over medium heat, add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the pan. Add the sliced onions and cook on low heat for about 30 minutes, stirring occasionally, until they are soft and caramelized. Add sherry wine and cook for an additional 5-10 minutes until the liquid is reduced.

Sauté the Spinach
In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.
