Grilling the Mushrooms

    Prepare the Mushrooms

    Clean the local mushrooms and slice them if they are large. Toss them in olive oil, salt, and black pepper.

    Grill the Mushrooms

    Preheat your grill to medium-high heat. Grill the mushrooms for about 5-7 minutes on each side, or until they are tender and have nice grill marks. Remove from heat and set aside.

Preparing the Smokey Mornay Sauce

    Make the Roux

    In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until it forms a light golden paste.

    Add Milk

    Gradually add the milk while whisking constantly to avoid lumps. Cook until the sauce thickens, about 5 minutes.

    Add Cheese and Seasoning

    Reduce the heat to low, and stir in the smoked cheese, nutmeg, and salt. Cook until the cheese is melted and the sauce is smooth.

Making the Parsley Oil

    Blend the Ingredients

    In a blender, combine the fresh parsley leaves and olive oil. Blend until smooth. Season with salt to taste.

Plating

    Serve the Dish

    On a plate, arrange the grilled mushrooms, drizzle with smokey mornay sauce, and finish with a swirl of parsley oil. Enjoy!
