Fried Haddock

    Prepare the Fish

    In a bowl, mix the flour, cornmeal, salt, and black pepper. In another bowl, whisk the eggs and milk together.

    Coat the Haddock

    Dip each haddock fillet in the egg mixture, then coat it in the flour-cornmeal mix. Ensure each piece is well-coated.

    Fry the Haddock

    Heat vegetable oil in a deep skillet over medium-high heat. Fry the coated haddock fillets in batches until golden brown, about 4-5 minutes per side.

    Drain and Assemble

    Remove the fried haddock and place on paper towels to drain excess oil. Assemble the sandwich by placing a fried fillet on a bun, adding lettuce, tomato, and a generous dollop of tartar sauce.

    In a bowl, combine mayonnaise, dill pickles, capers, lemon juice, and Dijon mustard. Mix well and season with salt and pepper to taste.
