Focaccia Crumb Roasted Haddock

    Prepare Focaccia Crust

    Preheat your oven to 400°F (200°C). Tear the focaccia bread into small pieces and pulse in a food processor until you have coarse crumbs.

    Season Haddock

    In a bowl, mix together the olive oil, lemon zest, salt, and pepper. Brush the haddock fillets with the mixture.

    Coat with Focaccia Crumbs

    Press the focaccia crumbs onto the fillets to coat them well and place them on a baking sheet.

    Roast the Haddock

    Bake in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork.

Caper Aioli

    Make the Aioli

    In a bowl, mix together mayonnaise, capers, minced garlic, lemon juice, and salt until well combined. Refrigerate until ready to serve.

Garlic Mashed Potatoes

    Cook the Potatoes

    In a large pot, boil the chopped potatoes until tender, about 15-20 minutes. Drain and return to the pot.

    Add butter, minced garlic, milk, salt, and pepper to the potatoes. Mash until smooth and creamy.

Asparagus

    Prepare Asparagus

    Toss asparagus spears with olive oil, salt, and pepper. Place on a baking sheet.

    Roast Asparagus

    Roast in the oven alongside the fish for the last 10-12 minutes of cooking time, until tender.
