Prepare the Filling
In a skillet, heat olive oil over medium heat. Add shallots and leeks, cooking until softened. Add mixed mushrooms and sauté until they release their moisture and begin to brown. Pour in Madeira wine and let it reduce by half. Stir in heavy cream and cook until thickened. Add spinach, salt, and pepper. Remove from heat and let cool.

Make the Ravioli
Lay out a sheet of fresh pasta on a floured surface. Place small mounds of the mushroom filling (about a tablespoon) on one half of the pasta sheet. Brush the edges with water and fold the other half over, pressing down to seal. Cut out individual ravioli shapes and place on a floured tray.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add ravioli and cook for about 4-5 minutes, or until they float to the surface. Remove with a slotted spoon.

Prepare the Sauce
In the same skillet used for the filling, add additional olive oil if needed. Add the remaining Madeira cream, bringing to a simmer. Stir in shaved Parmesan cheese until melted.

Serve
Plate the cooked ravioli and drizzle with the Madeira cream sauce. Garnish with extra Parmesan and serve immediately.
