Prepare the Dough
Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth. Beat in the egg and vanilla extract.

Add Chips and Granola
Fold in the dark chocolate chips, white chocolate chips, and granola until evenly distributed.

Bake the Cookies
Drop tablespoon-sized amounts of dough onto ungreased baking sheets. Bake for 10-12 minutes or until the edges are lightly golden. Let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Assemble the Sandwiches
Once the cookies are completely cool, take one cookie and place a scoop of vanilla ice cream on the flat side. Drizzle chocolate sauce over the ice cream, then top with another cookie, flat side down. Gently press together to form the sandwich. Repeat with remaining cookies.

Serve immediately or freeze the sandwiches for 30 minutes to firm up before serving.
