Directions

  1. 1

    Cook the Bacon

In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

  2. 2

    Sauté Vegetables

Add the chopped onion and celery to the bacon fat in the pot. Sauté until the onion is translucent. Add the minced garlic and sauté for another minute.

  3. 3

    Add Potatoes and Broth

Stir in the diced potatoes, thyme, and brown sugar. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until the potatoes are tender, about 15 minutes.

  4. 4

    Add Clams and Cream

Once the potatoes are tender, add the chopped clams and heavy cream. Simmer for another 5-10 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.

  5. 5

    Serve

Ladle the clam chowder into bowls, garnish with crispy bacon and chopped chives, and serve hot.
