Prepare the Risotto
In a large saucepan, heat a tablespoon of oil over medium heat. Add the chopped onion and garlic, sauté until softened. Add the risotto rice and cook, stirring for about 2 minutes. Gradually add the vegetable broth, one cup at a time, allowing the rice to absorb the liquid before adding more. Stir frequently until the rice is creamy and al dente, about 20 minutes. Season with salt and black pepper. Remove from heat and let it cool.

Form the Arancini
Once the risotto has cooled, mix in the grated Parmesan cheese, beaten egg, and cubed mozzarella. Using your hands, form the mixture into small balls, about the size of a golf ball. Roll each ball in breadcrumbs until fully coated.

Fry the Arancini
Heat oil in a deep frying pan over medium-high heat. Once hot, carefully add the arancini balls in batches, frying until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Prepare Roasted Poblano Crema
While arancini are frying, roast two poblano peppers over an open flame or in the oven until charred. Place in a bag to steam for 10 minutes, then peel and deseed. Blend the roasted poblanos with 1 cup of sour cream, the juice of one lime, and salt to taste until smooth.

Serve
Serve the crispy arancini hot with the roasted poblano crema on the side for dipping.
