Method

Prepare Tartlette Crust

    Make the dough

    In a mixing bowl, combine the all-purpose flour, powdered sugar, and butter. Mix until crumbly. Add the egg yolk and vanilla extract, and mix until the dough forms.

    Chill

    Wrap the dough in plastic wrap and refrigerate for 30 minutes.

    Pre-bake

    Preheat the oven to 350°F (175°C). Roll out the dough and press it into tartlette molds. Prick the bottom with a fork and bake for 10-12 minutes until lightly golden. Let it cool.

Make Chocolate Filling

    Melt chocolate

    In a saucepan over low heat, combine dark chocolate and heavy cream. Stir until melted and smooth.

    Mix ingredients

    In a bowl, whisk together granulated sugar, eggs, and vanilla extract. Gradually add the melted chocolate mixture and mix until well combined.

    Fill crust

    Pour the chocolate filling into the cooled tartlette crusts and bake for 15-20 minutes. Let cool to set.

Prepare Pecan Topping

    Combine topping ingredients

    In a saucepan, combine chopped pecans, brown sugar, corn syrup, bourbon, and butter. Cook over medium heat until bubbly.

    Top tartlettes

    Spoon the pecan mixture over the baked chocolate filling and let it cool completely.

Make Whipped Cream

    Whip cream

    In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

Serve

    Plate and garnish

    Serve the cooled tartlettes topped with whipped cream.
