Preparation

    Prepare the Cauliflower Steaks

    Remove the leaves from the cauliflower and slice it into 1-inch thick steaks. Brush both sides with olive oil, and season with salt and pepper.

    Make the Hot Honey Glaze

    In a small bowl, mix honey and red pepper flakes together. Set aside.

    Prepare the Chimichurri

    In a food processor, combine parsley, garlic, red wine vinegar, olive oil, salt, and pepper. Blend until smooth and set aside.

    Cook the Quinoa

    Rinse quinoa under cold water. In a saucepan, combine quinoa and water, bring to a boil, then reduce to a simmer for 15 minutes or until water is absorbed. Fluff with a fork.

    Make the Quinoa Salad

    Chop cucumber and halved cherry tomatoes. In a large bowl, combine cooked quinoa, cucumber, cherry tomatoes, feta cheese, olive oil, lemon juice, salt, and pepper. Mix well.

    Prepare the Asparagus

    Trim the ends of the asparagus and toss with olive oil, salt, and pepper.

Cooking

    Cook the Cauliflower Steaks

    Preheat a grill or grill pan over medium-high heat. Grill the cauliflower steaks for about 5-7 minutes on each side, brushing with hot honey glaze during the last 2 minutes of cooking.

    Cook the Asparagus

    On the same grill or in a pan, cook the asparagus for about 4-5 minutes, turning occasionally until tender.

Serving

    Plate the Dish

    Serve the grilled cauliflower steaks topped with chimichurri, alongside the quinoa salad and grilled asparagus.
