Spicy Roasted Tomato Aioli

Method

Preparing the Patatas Bravas

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into bite-sized cubes.

    Season the Potatoes

    In a large bowl, toss the potato cubes with olive oil, salt, paprika, and cayenne pepper until evenly coated.

    Roast the Potatoes

    Spread the seasoned potatoes on a baking sheet in a single layer. Roast for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

Making the Spicy Roasted Tomato Aioli

    Prepare the Aioli

    In a blender or food processor, combine mayonnaise, roasted tomatoes, garlic cloves, lemon juice, salt, black pepper, and hot sauce. Blend until smooth and well combined.

    Taste and Adjust

    Taste the aioli and adjust seasoning or add more hot sauce if desired.
