Preparation of Beef Tenderloin

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Beef

    Season the beef tenderloin with salt, black pepper, minced garlic, rosemary, thyme, and olive oil. Rub the mixture all over the meat.

    Sear the Beef

    In a hot skillet, sear the beef on all sides until browned, about 3-4 minutes per side.

    Roast the Beef

    Transfer the seared beef to the oven and roast for about 25-30 minutes, or until it reaches your desired doneness. Let it rest for 10 minutes before slicing.

Preparation of Root Vegetable Hash

    Cook the Bacon

    In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels.

    Sauté the Vegetables

    In the same skillet, add olive oil, then add the diced potatoes, carrots, and parsnips. Season with salt and pepper, and sauté for about 15-20 minutes until tender.

    Add Kale

    Add the chopped kale and cooked bacon to the skillet. Cook for an additional 5 minutes until the kale is wilted.

Preparation of Cabernet Jus Reduction

    Make the Jus

    In a saucepan, combine the cabernet sauvignon and simmer over medium heat until reduced by half, about 15 minutes. Season with salt and pepper to taste.
