Lobster Preparation

    Prepare the Butter Bath

    In a saucepan, melt the butter over low heat. Add minced garlic and let it infuse for about 5 minutes.

    Cook the Lobster

    Add the lobster tails to the melted butter, ensuring they are fully submerged. Poach for 8-10 minutes until the lobster is opaque and cooked through.

    Season the Lobster

    Remove the lobster from the butter and drizzle with lemon juice. Season with salt and black pepper.

Risotto Cake Preparation

    Cook the Risotto

    In a saucepan, heat the chicken broth until simmering. In a separate pan, toast Arborio rice for 2-3 minutes, then gradually add warm broth, stirring constantly until rice is creamy and cooked, about 20 minutes.

    Once risotto is cooked, remove from heat and stir in Parmesan cheese, beaten eggs, and season with salt and pepper.

    Form Cakes

    Allow risotto to cool slightly, then shape into cakes, dusting with flour to help hold form.

    Fry the Cakes

    In a skillet, heat olive oil over medium heat. Fry the risotto cakes until golden brown, about 4-5 minutes per side.
