Preparing the Chicken

    Blackening the Chicken

    Preheat a skillet over medium-high heat. Season the chicken breasts generously with salt, black pepper, and any additional blackening seasoning. Add a tablespoon of oil to the skillet and sear the chicken for 5-7 minutes on each side until fully cooked and a nice crust forms. Remove from skillet and let rest.

    Assembling the Salad

    While the chicken rests, prepare the salad. Slice the avocado, tomatoes, and red onion. In a large bowl, combine mixed greens, avocado, sliced tomatoes, red onion, and crumbled goat cheese.

Preparing the Dressing

    Making the Bacon-Tomato Dressing

    In the same skillet used for the chicken, cook the bacon until crispy. Remove and chop. Add the diced tomato to the bacon fat and sauté for 2 minutes. Whisk in olive oil, red wine vinegar, honey, salt, and black pepper. Stir in the chopped bacon.

Serving

    Slice the blackened chicken and place it on top of the salad mixture. Drizzle with the warm bacon-tomato dressing and serve immediately.
