Pickling Beets

    Quick Pickling

    In a pot, bring water to a boil and add the peeled and chopped red and yellow beets. Boil for about 15-20 minutes until fork-tender. Drain and let cool.

    Pickling Solution

    In a bowl, mix apple cider vinegar, maple syrup, salt, and black pepper. Once the beets are cool, slice them and toss in the pickling solution. Let sit for at least 30 minutes.

Preparing the Salad

    Pecans

    In a skillet, toast the pecans over medium heat for about 5-7 minutes or until fragrant.

    Assembling the Salad

    In a large bowl, combine arugula, sliced pickled beets, diced avocado, thinly sliced red onion, dried cranberries, and toasted pecans. Crumble goat cheese on top.

    Vinaigrette

    In a small jar, combine olive oil, fresh lime juice, salt, and black pepper. Shake well to combine.

    Serving

    Drizzle the vinaigrette over the salad and toss gently. Serve immediately.
