Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare Garlic

    Wrap the garlic cloves in aluminum foil with a drizzle of olive oil and roast them in the oven for about 20-25 minutes until soft.

    Toast Almonds

    In a skillet over medium heat, toast the sliced almonds for about 5 minutes until golden brown. Set aside.

Assembly

    Layer Phyllo Dough

    On a clean surface, lay out the phyllo dough sheets. Brush each sheet with melted butter before layering them on top of each other, creating a stack.

    Add Brie and Toppings

    Place the double crème Brie in the center of the layered phyllo. Spread raspberry preserves on top, then sprinkle with toasted almonds and squeeze roasted garlic over it.

    Wrap and Bake

    Fold and wrap the phyllo around the cheese and toppings, creating a parcel. Brush the outside with more melted butter. Place on a baking sheet.

    Bake in the preheated oven for 25-30 minutes, or until the phyllo is golden brown and crispy.

    Let cool for a few minutes before serving. Enjoy warm with additional raspberry preserves on the side.
