Method

For the Bacon Wrapped Beef Tornado

    Prepare the Beef

    Season the beef tenderloin with salt and black pepper. Wrap the bacon strips around the beef, securing with toothpicks if necessary.

    Sear the Beef

    In a skillet, heat olive oil over medium-high heat. Sear the wrapped beef for about 3-4 minutes on each side, until the bacon is crispy and the beef is browned. Transfer to the oven and roast at 400°F (200°C) for about 10-15 minutes, or until desired doneness.

For the Fingerling Potato Gratin

    Prepare the Potatoes

    Preheat the oven to 375°F (190°C). Slice the fingerling potatoes thinly and arrange them in a greased baking dish.

    Mix the Cream and Cheese

    In a bowl, combine heavy cream, minced garlic, thyme, salt, and pepper. Pour the mixture over the sliced potatoes. Top with Gruyère and Parmesan cheese.

    Bake the Gratin

    Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, until golden and bubbly.

For the Roasted Garlic and Rosemary Jus

    Roast the Garlic

    In a small pan, combine whole garlic cloves and rosemary with red wine. Simmer over low heat, reducing the mixture by half.

    Finish the Jus

    Add beef stock to the pan and bring to a simmer. Season with salt and pepper, and let it reduce until thickened.
