Method

Prepare the Risotto

    Cook the Aromatics

    In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent.

    Toast the Rice

    Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.

    Add Broth Gradually

    Add the broth one ladle at a time, stirring constantly until the liquid is absorbed before adding the next ladle. Continue until the rice is creamy and al dente, about 18-20 minutes.

    Finish the Risotto

    Remove from heat, stir in the grated Parmesan cheese, beaten egg, salt, and pepper. Spread the risotto on a baking sheet and let cool completely.

Form and Fry the Arancini

    Shape the Risotto

    Once the risotto has cooled, take a small amount (about 2 tablespoons) and form it into a ball. Place a small piece of cheese in the center if desired.

    Coat the Balls

    Roll the risotto ball in flour, then dip in beaten eggs, and finally coat with breadcrumbs.

    Heat the Oil

    In a deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Arancini

    Fry the arancini in batches until golden brown, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.

Prepare the Spicy Crème Fraîche

    Mix the Ingredients

    In a small bowl, combine crème fraîche, Sriracha sauce, lime juice, and salt to taste. Mix until smooth.
