Prepare the collard greens

Wash the collard greens thoroughly under cold water. Remove the tough stems and chop the leaves into bite-sized pieces.

Chop the onions and garlic

Peel and chop the onion into small pieces. Mince the garlic cloves.

Sauté the aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add the smoked turkey

Place the smoked turkey leg into the pot, allowing it to brown slightly with the onions and garlic for about 3-4 minutes.

Combine collard greens and broth

Add the chopped collard greens to the pot, followed by the chicken broth. Stir well to combine all ingredients.

Season the mixture

Add red pepper flakes, salt, and black pepper to the pot. Stir to distribute the seasonings evenly.

Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30-35 minutes, or until the collard greens are tender and the flavors meld.
