Method
Prepare the Chicken
Preheat the Oven
Preheat your oven to 375°F (190°C).
Sear the Chicken
In a large oven-safe skillet, heat olive oil over medium-high heat. Season the chicken tenderloins with salt and black pepper. Sear them for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
Make the Sauce
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add chopped sun-dried tomatoes and stir. Pour in the heavy cream and add Italian seasoning. Stir to combine and let it simmer for 2-3 minutes.
Combine Chicken and Sauce
Return the seared chicken to the skillet, spooning the sauce over the top. Sprinkle grated Parmesan cheese over the chicken.
Bake
Transfer the skillet to the preheated oven and bake for 20-25 minutes, until the chicken is cooked through and the sauce is bubbly.
Make the Mashed Potatoes
Serve
Plate the Dish
Serve the chicken on a plate with a generous amount of creamy sauce. Add a serving of mashed potatoes on the side.
Garnish
Garnish the dish with additional grated Parmesan if desired.
