Method
Prepare Graham Cracker Crust
Make the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until well blended. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.
Prepare Sweet Potato Cheesecake Filling
Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese until smooth. Add the mashed sweet potato, granulated sugar, maple syrup, eggs, vanilla extract, ground cinnamon, and salt. Mix until well combined and smooth. Pour the cheesecake filling over the cooled graham cracker crust.
Bake the Cheesecake
Bake the cheesecake in the preheated oven for 40-45 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for about 1 hour. Then, remove from the oven and refrigerate for at least 4 hours or overnight.

In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, ground nutmeg, and salt. In another bowl, beat the eggs and then mix in the mashed sweet potato, vegetable oil, and vanilla extract. Gradually combine the wet and dry ingredients until just mixed.
Prepare Cream Cheese Maple Icing
Make the Icing
In a medium bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, maple syrup, and vanilla extract. Mix until creamy and well combined.
Frost the Cake
Once the spice cake layer has cooled, spread the cream cheese maple icing evenly on top. Slice and serve the cheesecake chilled or at room temperature.
