Catfish Preparation
In a shallow bowl, combine the cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper. Mix well to create your breading mixture.
Then, dredge the coated fillets in the seasoned cornmeal mixture, pressing gently to adhere the breading.
Frying
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Carefully place the breaded catfish fillets into the hot oil, frying them for about 4-5 minutes on each side, or until they are golden brown and cooked through.
Once cooked, remove the catfish from the oil and drain on a paper towel to remove excess oil.
To serve, place each piece of fried catfish on a slice of white bread.
Garnish with a dash of grated Parmesan cheese and serve with lemon wedges on the side.
