Chicken Preparation
Prepare the Chicken
Start by seasoning the boneless chicken breasts. In a small bowl, mix together salt, black pepper, garlic powder, and paprika. Rub the seasoning mixture over the chicken breasts evenly.
Bread the Chicken
Set up a breading station. Place all-purpose flour in one shallow dish, beaten eggs in a second dish, and breadcrumbs in a third. Dip each seasoned chicken breast first in the flour, then in the eggs, and finally coat it well with breadcrumbs.
Fry the Chicken
Heat the cooking oil in a large skillet over medium-high heat. Once the oil is hot, carefully place the breaded chicken breasts in the skillet. Cook for about 5-7 minutes on each side or until golden brown and cooked through, with an internal temperature of 165°F (75°C). Remove from the skillet and let them drain on paper towels.

Prepare the Vegetables
While the chicken is cooking, wash and slice the tomato into thin rounds.
Assemble the Sandwich
On the bottom half of each brioche bun, spread 1 tablespoon of mayonnaise. Place a fried or grilled chicken breast on top, followed by a slice of cheddar cheese, a lettuce leaf, and slices of tomato. Finish with the top half of the brioche bun.
Serve
Serve the chicken sandwich immediately while warm, with your choice of sides.
