Cooking Instructions
- 1
Preparing the Rice
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes, then drain.
- 2
Cooking the Rice
In a large pot, bring 4 cups of water to a boil. Add the soaked rice and 1 tsp of salt. Cook for about 5-7 minutes until the rice is partially cooked and still has a bite. Drain the rice.
- 3
Creating the Tahdig Layer
In the same pot, heat 1 cup of olive oil or ghee over medium heat. Once hot, add the drained rice back to the pot, pressing it down to form a compact layer. Cover the pot with a lid wrapped in a clean kitchen towel to absorb steam.
- 4
Cooking Tahdig
Cook on low heat for about 30-40 minutes until the rice is fully cooked and the bottom forms a crispy golden crust (tahdig).
- 5
Serving
Once done, carefully invert the pot onto a serving platter to reveal the crispy tahdig. Garnish with chopped cilantro and sliced green chilies. Serve warm.
