Preparation of Filling

    Sautéing Vegetables

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until translucent. Add spinach and dill, cooking until spinach wilts. Remove from heat and let cool.

    In a large bowl, combine the cooled spinach mixture, crumbled feta, beaten eggs, salt, and pepper. Mix well.

    Preparing the Phyllo Dough

    Preheat the oven to 375°F (190°C). Grease a pie dish with melted butter. Layer half of the phyllo sheets, brushing each layer with melted butter.

    Spread the spinach and feta filling evenly over the phyllo layers. Top with the remaining phyllo sheets, again brushing each layer with butter.

    In a bowl, combine diced tomatoes, red bell pepper, onion, cilantro, lemon juice, olive oil, salt, and pepper. Mix well and let sit for at least 10 minutes to meld flavors.
