Falafel Preparation

    Prepare the Falafel Mixture

    In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and pepper. Blend until a coarse mixture forms. If too wet, add flour to bind.

    Shape the Falafel

    Form the mixture into small balls or patties. Place on a tray and refrigerate for 30 minutes.

    Fry the Falafel

    Heat oil in a deep pan over medium heat. Fry the falafel in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Tomato Ezme Preparation

    Mix the Ezme

    In a bowl, combine chopped tomatoes, red onion, green bell pepper, olive oil, lemon juice, and salt. Mix well and set aside.

Tahini Sauce Preparation

    Prepare the Tahini Sauce

    In a bowl, whisk together tahini, water, lemon juice, minced garlic, and salt until smooth. Adjust with more water if too thick.

Assembly

    Assemble the Pita

    Cut pita bread in half to create pockets. Stuff each pita with falafel, tomato ezme, tahini sauce, cilantro, and diced cucumber. Serve immediately.
