Prepare the Cauliflower
Preheat the oven to 400°F (200°C). Cut the cauliflower into small florets and spread them on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast in the oven for 25-30 minutes until golden and tender.

Prepare the Raw Ingredients
While the cauliflower is roasting, dice the tomato and chop the parsley. Halve the red grapes.

Combine Ingredients
In a large bowl, combine the roasted cauliflower, diced tomato, chopped parsley, and halved grapes.

Make the Dressing
In a small bowl, whisk together tahini, lemon juice, olive oil, salt, and pepper until smooth.

Toss and Serve
Drizzle the tahini dressing over the cauliflower mixture and toss gently to combine. Adjust seasoning if needed. Serve immediately or chill in the refrigerator for 30 minutes before serving.
