    Prepare the Potatoes

    Preheat the oven to 425°F (220°C). Wash and peel the russet potatoes. Cut them into wedges or thin strips, depending on your preference.

    Season the Fries

    In a large bowl, toss the potato wedges with olive oil, lemon zest, black pepper, and salt until evenly coated.

    Bake the Fries

    Spread the seasoned fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

    Prepare the Toum

    While the fries are baking, prepare the toum by blending 1 cup of garlic, 1 cup of vegetable oil, 1/4 cup of lemon juice, and salt to taste in a food processor until smooth.

    Serve

    Once the fries are done, remove them from the oven, and serve hot with the toum and a sprinkle of chili flakes for added spice.
