Preparing the Falafel Balls

    Soak Chickpeas

    Soak the dried chickpeas in water overnight or for at least 8 hours. Drain and rinse before using.

    Make the Mixture

    In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, black pepper, and flour. Process until a coarse mixture forms.

    Shape the mixture into small balls or patties, about 1-1.5 inches in diameter.

    Fry the Falafel

    Heat vegetable oil in a deep frying pan over medium heat. Fry the falafel balls in batches until golden brown, about 4-5 minutes per side. Drain on paper towels.

Making Tahini Sauce

    In a bowl, whisk together tahini, water, lemon juice, minced garlic, and salt until smooth. Adjust water to achieve desired consistency.

Preparing Tomato Ezme

    Chop Ingredients

    Finely chop the tomatoes, red onion, green pepper, and parsley. Combine in a bowl.

    Add lemon juice, olive oil, and salt to the chopped vegetables. Mix well.
