Eggs Preparation

    Beat the Eggs

    In a bowl, crack the 2 large eggs and add 1 tsp of salt and 0.5 tsp of black pepper. Whisk them together until the yolks and whites are fully combined.

    Cook the Eggs

    Heat a non-stick skillet over medium heat. Pour the beaten eggs into the skillet and cook for about 2-3 minutes, or until the edges begin to set. Use a spatula to gently lift the edges, allowing any uncooked egg to flow underneath. Cook for another 1-2 minutes until the eggs are fully set but still slightly soft in the center.

    Toast the Bread

    In another skillet or toaster, toast 2 slices of bread until golden brown. If using a skillet, add 1 tbs of butter to the pan, and once melted, place the bread slices in the pan and toast each side for about 2-3 minutes.

    Prepare the Avocado

    While the eggs and bread are cooking, slice the 0.5 avocado in half, remove the pit, and scoop out the flesh. Slice the avocado into thin slices.

    Halve the Cherry Tomatoes

    Rinse the 5 cherry tomatoes and cut them in half.

Plating

    Assemble the Platter

    On a plate, place the cooked eggs in the center. Arrange the toasted bread slices on one side. Add the sliced avocado next to the eggs and scatter the halved cherry tomatoes on the plate. Finally, garnish with 1 tbs of chopped fresh parsley over the eggs for added flavor and presentation.
