Method

Preparation

  1. 1

    Cook the Turkey Bacon

In a skillet over medium heat, add the turkey bacon slices. Cook until crispy, about 4-5 minutes per side. Remove from skillet and set aside on a paper towel to drain excess grease.

  2. 2

    Chop Vegetables

Finely chop the bell pepper and onion. Rinse the spinach under cold water and pat dry.

Cooking the Omelette

  1. 3

    Beat the Eggs

In a mixing bowl, crack the eggs and add salt and black pepper. Whisk until well combined and the mixture is slightly frothy.

  2. 4

    Sauté Vegetables

In the same skillet used for the turkey bacon, add olive oil and heat over medium heat. Add the chopped bell pepper and onion. Sauté for about 2-3 minutes until they are tender. Add the spinach and cook for another minute until it wilts.

  3. 5

    Add Eggs to the Skillet

Pour the beaten eggs over the sautéed vegetables in the skillet. Let it sit for about 1-2 minutes without stirring, allowing the edges to set.

  4. 6

    Add Cheese and Bacon

Sprinkle the shredded cheddar cheese evenly on top of the eggs, then crumble the cooked turkey bacon over the cheese.

  5. 7

    Finish Cooking

Using a spatula, gently fold one half of the omelette over the other. Cook for an additional 2-3 minutes until the cheese is melted and the eggs are fully cooked through.

  6. 8

    Plate the Omelette

Carefully slide the omelette onto a plate. Cut in half if desired and serve immediately.
