    Prepare the Ingredients

    Chop the onion finely. Rinse the fresh spinach under cold water and then chop it roughly. Halve the cherry tomatoes. Crumble the goat cheese into small pieces.

    Cook the Vegetables

    In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent. Add the chopped spinach and cook until wilted, about 2 minutes. Stir in the halved cherry tomatoes and cook for another minute. Season with a pinch of salt and pepper. Remove the mixture from the skillet and set aside.

    Prepare the Omelette

    In a bowl, whisk together the eggs, salt, and black pepper until fully combined and frothy. In the same skillet, add a little more olive oil if needed and pour in the egg mixture. Cook over medium-low heat, gently stirring the edges with a spatula while the center sets.

    Add Filling and Finish Cooking

    Once the edges of the omelette are set and the center is still slightly runny, add the sautéed vegetable mixture and crumbled goat cheese on one half of the omelette. Carefully fold the other half over the filling and cook for another minute or until the cheese is slightly melted and the eggs are fully set.
