Method

Preparation

  1. 1

    Slice the Onions

Peel and thinly slice the onions. Aim for uniform thickness for even cooking.

  2. 2

    Prepare the Bread

Slice the baguette into approximately 1-inch thick slices and set aside.

Cooking

  1. 3

    Sauté the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 30-40 minutes until the onions are caramelized and golden brown.

  2. 4

    Add Garlic and Seasonings

Stir in the minced garlic and cook for an additional 2 minutes. Add the thyme, bay leaves, salt, and black pepper, and mix well.

  3. 5

    Deglaze with Wine

Pour in the dry white wine and scrape the bottom of the pot to deglaze. Allow the wine to reduce for about 5 minutes.

  4. 6

    Add Broth

Pour in the beef broth and bring to a simmer. Cover and let it cook for about 20-30 minutes to allow the flavors to meld.

Serving

  1. 7

    Prepare the Soup for Serving

Remove the bay leaves from the soup. Taste and adjust seasoning if necessary.

  2. 8

    Toast the Bread

While the soup is simmering, preheat your oven to 375°F (190°C). Place the sliced baguette on a baking sheet and toast in the oven for about 10 minutes until lightly golden.

  3. 9

    Assemble the Soup

Ladle the hot soup into oven-safe bowls, place a slice of toasted baguette on top of each bowl, and generously sprinkle with shredded Gruyère cheese.

  4. 10

    Broil the Cheese

Place the bowls on a baking sheet and broil in the oven for 3-5 minutes, or until the cheese is bubbly and golden brown. Watch closely to prevent burning.

  5. 11

    Serve

Carefully remove the bowls from the oven and let them cool slightly before serving. Enjoy your homemade French onion soup!
