    Once heated, remove the saucepan from heat and let the milk cool down to about 110°F (43°C). You can use a thermometer to check the temperature.

    In a small bowl, mix 1 cup of plain yogurt with a small amount of the cooled milk to create a smooth mixture. Then, add this mixture back into the saucepan with the rest of the cooled milk.

    Cover the saucepan with a lid or wrap it in a towel. Place the saucepan in a warm spot (like an oven with the light on or a yogurt maker) and let it sit undisturbed for 6-12 hours, depending on how tangy you like your yogurt.

    After the incubation period, stir in 3 tablespoons of honey and 1 teaspoon of vanilla extract if desired. Mix well to combine.
