    Chop the Vegetables

    Dice the cherry tomatoes and finely chop the red onion. Rinse the fresh spinach under cold water and roughly chop it if the leaves are large.

    In a medium bowl, whisk together the large eggs, milk, salt, and black pepper until well combined and slightly frothy.

Cooking the Omelette

    Heat the Pan

    In a non-stick skillet, heat the olive oil over medium heat until it shimmers.

    Sauté the Vegetables

    Add the diced cherry tomatoes and chopped red onion to the skillet. Sauté for about 2-3 minutes until the onions become translucent.

    Add the chopped spinach to the skillet and cook for another minute until wilted.
