Method

Preparation of Marinade

  1. 1

    Prepare the Marinade

In a large mixing bowl, combine olive oil, minced garlic, balsamic vinegar, chopped parsley, salt, and black pepper. Mix well to create a marinade.

Marinating and Roasting

  1. 2

    Marinate the Mushrooms

Clean the button mushrooms by wiping them with a damp cloth. Add them to the marinade and toss to ensure they are evenly coated. Cover the bowl and let the mushrooms marinate for at least 30 minutes at room temperature.

  2. 3

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  3. 4

    Roast the Mushrooms

Spread the marinated mushrooms on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes or until they are tender and slightly browned.

Cheese Topping

  1. 5

    Add Cheese

In the last 5 minutes of roasting, remove the baking sheet from the oven and sprinkle the grated Parmesan and Asiago cheeses evenly over the mushrooms. Return to the oven and continue roasting until the cheese is melted and golden brown.

Serving

  1. 6

    Serve

Remove the mushrooms from the oven and let them cool for a couple of minutes. Serve warm with slices of crusty bread on the side for dipping.
