    Sauté the Base Ingredients

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Vegetables

    Add the diced carrots and celery to the pot and cook for about 3-4 minutes until slightly softened.

    Pour in the Broth

    Carefully pour in the vegetable or chicken broth. Stir well to combine all ingredients.

Seasoning and Cooking

    Add Seasonings

    Add bay leaves, dried thyme, oregano, salt, and black pepper to the pot. Stir to combine and bring the mixture to a simmer.

    For Chili: Cook the Meat

    If making chili, in a separate skillet, brown the ground beef or turkey over medium heat. Once cooked, drain excess fat and add to the pot with the broth and vegetables.

    For Chili: Add Remaining Ingredients

    Stir in the canned diced tomatoes, kidney beans, chili powder, and cumin. Allow to simmer for at least 30 minutes, stirring occasionally.

    For Soup: Add Potatoes and Green Beans

    If making soup, add the diced potatoes and green beans to the pot. Let simmer for about 20-25 minutes until the potatoes are tender.

    Add Frozen Peas

    In the last 5 minutes of cooking, add the frozen peas to either the soup or chili, and stir well.

Serving
